Hey there!

So I can find the documentation on how to run a self-hosted server, but
the information on how to distribute each of the android/ios apps for
usage with said self-hosted server seems to be missing.

Also, it would be nice if this could be exposed as a user-configurable
setting, but possibly there are some security/design constraints there?

Hey Richard, that isn't a configuration that we support or are
interested in supporting. The source is available for you to do what
you'd like within the terms of the license, but this list isn't the
appropriate forum for that discussion.

It might become neccessary. After encrypted SMS was dumped, the servers
are a single point of failure if some government decided they didn't want
TextSecure traffic between people. Blocking the standard server would be a
logical way for some regime to block TS traffic, like some middle eastern
countries already do with WhatsApp, Skype and Viber.
